Micheal Mutenza, the executive chef at Eureka Place Hotel in Ntinda says a family can have beef sizzling skewers at any meal. He shows you how to prepare them;
You need;
Beef (preferably Sirloin fillet or topside cut into cubes)
– 1 teaspoon corn flour
-1 tablespoon light soy sauce
– 1 tablespoon sunflower oil
– 1 red bell pepper, 1 green pepper and yellow bell pepper cut into cubes
– A pinch of ground black pepper and salt to taste
– 1 teaspoon garlic powder
Procedure
Place the corn flour in a bowl then stir in the soy sauce, vegetable oil, salt and black pepper until smooth.
Add the beef cubes, stirring to combine and set aside for 10 minutes, or up to 24 hours in the fridge covered with cling film.
Heat a pan over a high heat until smoking hot, then add half of the oil, and swirl up the sides. Add in half the marinated beef cubes and cook for 2-3 minutes until tender and lightly golden. Tip on to a plate and keep warm. Repeat with the remaining beef cubes.
Quickly wipe out the wok with kitchen paper and add the rest of the oil. Then add the peppers and stir-fry for 1-2 minutes. Place the beef cubes and the peppers on a wooden bamboo skewers and place back the pan on fire.
Once it is heated through, add 3 tablespoons of tomato sauce and flambé the skewers on a pan under high heat for 1 minute: season to taste.
Sprinkle sesame seeds as a garnish then serve on warmed plates with either fries or mashed potatoes and sprinkle chopped coriander or scallions.
