Beetroot prefers better in moist, fertile soil in a sunny spot, but will also thrive in raised beds or pots.
Although it is possible to first sow beetroot in a nursery and later transplant it to the garden, it is better to sow it directly in the garden.
Dr Twaha Kakooza, an herbalist based in Kayunga district says beetroot soup is very useful. He gives some ways of preparing.
What you need / preparation
-5 or 6 raw beetroots
-2 medium-size onions (sliced)
-2 large Irish potatoes (optional)
-1 litre of vegetable cooking oil
-1 lemon
-150ml of yoghurt
-Salt and pepper to taste preparation;
-Finely grate the beetroots
-Chop the Irish potatoes into small pieces
-Cook the beetroot, onions, Irish potatoes and oil in a large pan at low heat for about half an hour or until all the vegetables are soft.
-Strain the soup, discarding the vegetables
-Add lemon juice and stir well
-Mix in the yoghurt and season with salt and pepper
-Serve chilled
The fact that beetroot is rich in magnesium and iron makes it good for the blood. Antioxidants beta-carotene and other carotenoids are present in most yellow, orange, and many red pigments in fruits and vegetables. Beetroot hardly has any calories and is a good source of fibre.
